Comforting Ratatouille

I've been wanting to share this recipe with you guys for so long, it's definitely one of my favourite dishes! This colourful, nutrient rich, hearty ratatouille served in a bowl with steaming rice is just the perfect comfort dish to cozy up with on a rainy winter day. I don't always follow this exact recipe, you can easily adapt it to what's in season.
