This might sound weird to you, considering the fact I’m sleep deprived (being a new mom), lately I’ve been struggling to sleep.
The combination of waking up at random hours (to feed Maya) with going back to work + other changes that have been going on in my life recently, have been keeping me awake at night. I either struggle to fall asleep or I struggle falling back to sleep after waking up for a night feed. My body is confused, and my mind is over-active....

I feel very proud of myself for making up this recipe while 'wearing' my 3-months old baby ;) Our days have become full in all the best ways since Maya was born and it's been challenging to find time to cook (something I love doing). But few months in and we've figured out some strategies to get things done while caring for Maya. Has it been perfect? No... As I'v recently discovered my iron levels aren't great (hello third trimester!) I've decided to be more intentional and planned around making sure I'm getting enough iron in my diet (let me know if you're interested knowing more about what I did). Butternut squash is one of those vegetables that are always on my shopping list! Its long shelf life makes it very convenient to have at home for those days you find yourself with an empty fridge and have no time or your'e too tired to go to the supermarket. As part of my self care I love having my few go-to 'pantry meals' and this soup definitely meets the requirements - quick, easy to make and oh so delicious!

I've been wanting to share this recipe with you guys for so long, it's definitely one of my favourite dishes!

This colourful, nutrient rich, hearty ratatouille served in a bowl with steaming rice is just the perfect comfort dish to cozy up with on a rainy winter day.

If you’ve been following me for a while you probably know by now how much I love my morning smoothies (specially with frozen fruits & veg). We all need to have few easy go-to delicious recipes to keep ourselves nourished during busy times.
