Winter Pot

I love having few go-to dishes I cook whenever I don't have much time to cook, I don't feel creative or it's the end of the week and I want to finish up all the veggies in the fridge. My winter pot is one of those quick, simple and flexible in terms of ingredients (hence you can skip some ingredients or add some of your own).



1 diced onion

2 garlic cloves, minced

1 cup diced butternut squash

1 diced zucchini

1 big carrot, diced

2 diced tomatos

1/2 cup red lentils

1/2 cup water (depends how liquid you want it to be)

1 tsp cumin

1 tsp turmeric

salt & pepper

Top -

Fresh spinach

Fresh cilantro


Heat some coconut oil in a pot, add the onion and garlic.

Lower the heat and cook for a few minutes until the onions have softened.

Add the spices, stir constantly, ensuring that they do not burn.

Add remaining ingredients, cover and simmer until ingredients softens. If it's too dry, add a little water, it depends on how much liquid the lentils absorbs. Cook for about 20 - 10 min.

Serve with brown rice (or quinoa, buckwheat, black rice...) and some fresh spinach and cilantro.
