I've been wanting to share this recipe with you guys for so long, it's definitely one of my favourite dishes!
This colourful, nutrient rich, hearty ratatouille served in a bowl with steaming rice is just the perfect comfort dish to cozy up with on a rainy winter day.
I don't always follow this exact recipe, you can easily adapt it to what's in season.
Ingredients (for 6-8 servings):
4 medium size aubergines (cut to large cubes)
2 red onions (finely chopped)
3 garlic cloves cloves (finely sliced)
6 large ripe tomatoes (cut to large cubes)
3 courgettes (cut to large cubes)
1.5 cups of cherry tomatoes (cut in halves)
4 orange/red/yellow peppers (cut to large cubes)
2 celery sticks (finely chopped)
1/2 cup sun-dried tomatoes (chopped)
1/4 cup green olives (copped)
Pinch of salt
Pinch of black pepper
In a large pot, fry the aubergines in olive oil for 4 min while steering, on medium heat
Add the onions and garlic, and fry for 3 more minutes
Add the tomatoes, the courgettes, the cherry tomatoes, the peppers and the celery and bring to a boil
Add the sun-dried tomatoes and the olives, and season
Cover and cook for 20 min on low heat
Serve hot on white/brown rice
