Comforting Ratatouille

I've been wanting to share this recipe with you guys for so long, it's definitely one of my favourite dishes!

This colourful, nutrient rich, hearty ratatouille served in a bowl with steaming rice is just the perfect comfort dish to cozy up with on a rainy winter day.

I don't always follow this exact recipe, you can easily adapt it to what's in season.

Ingredients (for 6-8 servings):

  • 4 medium size aubergines (cut to large cubes)

  • 2 red onions (finely chopped)

  • 3 garlic cloves cloves (finely sliced)

  • 6 large ripe tomatoes (cut to large cubes)

  • 3 courgettes (cut to large cubes)

  • 1.5 cups of cherry tomatoes (cut in halves)

  • 4 orange/red/yellow peppers (cut to large cubes)

  • 2 celery sticks (finely chopped)

  • 1/2 cup sun-dried tomatoes (chopped)

  • 1/4 cup green olives (copped)

  • Olive oil

  • Pinch of salt

  • Pinch of black pepper

Method

  1. In a large pot, fry the aubergines in olive oil for 4 min while steering, on medium heat

  2. Add the onions and garlic, and fry for 3 more minutes

  3. Add the tomatoes, the courgettes, the cherry tomatoes, the peppers and the celery and bring to a boil

  4. Add the sun-dried tomatoes and the olives, and season

  5. Cover and cook for 20 min on low heat

Serve hot on white/brown rice
